Aaaaaah…yes. This is posted for a very special someone…YOU…well and another special someone, HEY GIRL HEY!
Ok, one day I went to a seafood restaurant in Denver and I was sadly disappointed. It was VERY VERY bland. I decided that I could come up with my own version that would be much better.
It ends up looking like THIS…
After that I add YUMMY YUMMY shrimp to it.
OK so I start with excellent veggies and olives. I use cucumbers, heirloom tomatoes, Kalamata olives and some red onion for my hunny. I add all of that to some tricolored pasta that is fully cooked and give a generous toss of olive oil and your favorite balsamic vinegar, red wine vinegar also works. I top the entire thing with some yummy feta. Can you tell I think this is yummy?
On to the shrimp.
So that that restaurant the shrimp tasted like cardboard. I did not care for that. I decided to soak my shrimp in lime juice and at a later date added Sriracha to the mix. Little did I know, the lime juice kind of “cooks” the shrimp as in ceviche. But I didn’t like the idea of eating the shrimp without warming it up a touch…

That is all the juice and a touch of olive oil in a pan to warm them up, serve them on top of the salad and as my Daddy used to say, “that’ll make your tongue slap your brains out.”
I could go for this dish right now… mmmmm!!!

It really is incredibly yummy. To me the key to this dish is using the best of ingredients. The veggies that don’t taste bland, but selecting organic and heirloom quality. Thanks for commenting an please come back and let me know if you make it!
