I have heard of this for a while and a month or so ago, I got to try this. I knew that there was corn, mayo, and lime juice. This, in and of itself, does not sound good. It does look very good from the photos I have viewed, so I had to try it.
I decided to try to make it on my own, and it turned out AMAZINGLY well. I am not promising this is authentic, but it is my version and I think it is yummy!
- Corn on the cob
- Chipotles in adobo sauce
- Cotija cheese
- Limes (for the squeezing 😉 )
- Chipotle Seasoning (I like the stuff I get from Penzy’s)
Take corn, and boil it, then set it aside.
Take mayo and chipotles in adobo sauce and blend. I add two chipotles into a big blob (highly technical word here) of mayo and when I have it at an almost salmon color, I consider that enough. You may like more or less, just taste it and see what you like.
Put this mixture generously over the corn.
Take the crumbled cotija cheese and place that onto the corn
Top with fresh squeezed lime juice and a sprinkling of chipotle seasoning.
